A BRIEF HISTORY OF BUBUR

Bubur is one of Indonesia’s oldest forms of nourishment, rooted in the archipelago’s deep rice culture. It emerged naturally wherever rice was grown — simmered longer with more water to create a soft, comforting, and easily digestible meal enjoyed by infants, elders, and everyone in between.

As it traveled across islands through trade routes and migration, bubur absorbed local flavors while keeping its gentle, humble character. Each region shaped its own style based on what the land provided — seafood along the coasts, garden vegetables in Sulawesi, herbal greens in rural villages, and sacred red rice in Bali.

More than sustenance, bubur became a symbol of care and community: a dish prepared at dawn, shared among families, and served in times of healing or gathering. In villages and markets, it was often ladled from one communal pot into many bowls — food that connected people as much as it nourished them.

Today, bubur remains a living culinary heritage, simple in form yet profound in meaning within Indonesia’s cultural memory. Notably, bubur ayam (Indonesian chicken porridge) was ranked #1 Best Porridge in the World by TasteAtlas in 2025, celebrating its comforting texture and layered flavors on a global stage.

Before the rush of the day, Indonesia wakes gently. In kitchens across the islands, rice is simmered, spices are ground, and sambals are stirred. Bubur is not merely food — it is memory, medicine, and community.

At Liap Liap, Heritage Breakfast gathers these stories into one table.
